Using the gentle methods of natural and regenerative farming, Agrivilla i Pini grow produce organically (which supply 40--50% of what is used in their kitchens), and alter their menus seasonally to ensure they are working with the rich land around them.
The hotel itself is a carefully restored 600-year-old monastery, in which only the most eco-friendly and local materials were used by local labourers, like clay, hemp, and rice husks for wall reconstruction.
